Learn the language of food love with some delicious Italian treats to gift those closest to you. Perfect for St Valentines and via zoom from your own kitchen you will be able to follow step by step instructions to make your own Baci biscotti! 

What will we cover?

Annalisa will take you on a journey to Perugia (in Italy’s Umbria region) as you make some delicious baci (kisses) biscuits and chocolates to share as treats with your loved ones ahead of Valentine’s Day. You might never return to supermarket chocolates again after you learn to make these treats in house!

What will you need?

Equipment:

  • 2 large mixing bowls
  • A wooden spoon and/or spatula
  • Pot with a heatproof bowl to fit on top
  • Electric beater/mixer
  • Medium-sized serving dish and/or oven tray
  • Cooling rack

Baci biscuit ingredients:

  • 140g hazelnut meal (or process/blend roasted hazelnuts with skins removed to form a powder *additional equipment required)
  • 80g caster sugar
  • 1tsp vanilla extract
  • 1 egg white
  • 1tbsp cocoa powder
  • Optional for garnishing: 15 roasted, blanched hazelnuts or 30 chocolate chips

Baci chocolate ingredients:

  • 120g finely chopped hazelnuts (roasted and blanched)
  • 20 whole roasted hazelnuts with skins removed (roast at 180 ᵒC until a fragrant smell fills the kitchen)
  • 150g dark chocolate and 1tbsp coconut oil (pre-melted/cooked together and allowed to cool for 1 hour before the class)
  • 200g Nutella or preferred chocolate and hazelnut spread
  • 1tbsp cocoa powder
  • 200g dark or milk chocolate for coating
  • Optional: 1tbsp of an almond or hazelnut liqueur (eg. Amaretto or Frangelico)

        Who will be teaching it?

        Annalisa Cercone, known through her Instagram page as Signorina Melbourne, is a proud Italian-Australian whose family roots stem from Naples and Abruzzo. A few years back she set out to learn a dish from every region in Italy and from this sparked her love for traditional regional cooking. She has travelled back and forth to Italy, studying food history and culture, and now provides food content for an Italian-Australian radio network. Annalisa also performs traditional southern Italian dances at festivals and events across Victoria, runs the podcast ‘Signorina Talks’ to discuss Italian-related topics and professionally makes and sells traditional Neapolitan desserts.

        This class is delivered online via ZOOM:

          • ZOOM is free to install on your Windows or Mac computer and also available as an app for your mobile/tablet device.
          • You will need either the meeting link or both the meeting ID plus password.  You don’t need to create an account to attend a meeting!
          • If you are new to ZOOM please ensure you have downloaded and installed it in advance of the class.
          • Here is a link to the ZOOM support site for a 1 minute tutorial on how to join a meeting.
          • You can optionally join from a device with a camera and microphone.
